If you are stuck on what to cook thats both cheap and easy, look no further than this delicious and satisfying meal. Perfect for your family of four. If its just you then this meal is great reheated for work lunches - simply put it in the microwave and you are ready to go. Note: store in an air tight container in the fridge for up to four days.

Time: 20 minutes

Ingredients:

  • 4 chicken breasts, cut into bite-sized pieces
  • Masterfoods Teriyaki Marinade (use as per the product's instructions)
  • 2 cups white rice (or 2 packets of pre-cooked rice)
  • 1 medium to large broccoli (or green beans)
  • Sesame seeds (for garnish)
  • Kewpie Mayonnaise (for garnish)

Instructions:

  1. Marinate the Chicken:
  •    Place the chicken breast pieces in a bowl.
  •    Pour the Masterfoods Teriyaki Marinade over the chicken, ensuring all pieces are coated.
  •    Allow the chicken to marinate for at least 30 minutes. If you have more time, marinating for several hours or overnight in the refrigerator will enhance the flavor.
  1. Cook the Rice:
  •    Prepare the white rice according to the package instructions. If you're using pre-cooked rice, follow the heating instructions on the package to warm it up.
  1. Cook the Broccoli (or Green Beans):
  • If using broccoli, cut it into florets. If using green beans, trim the ends.
  • Steam the broccoli or green beans until they are tender but still crisp, about 3-4 minutes for broccoli and 2-3 minutes for green beans. You can steam them on the stovetop or in the microwave.
  1. Cook the Chicken:
  •   Heat a large skillet or pan over medium-high heat.
  •   Add the marinated chicken pieces (including the marinade) to the hot skillet.
  •   Cook the chicken, stirring frequently, until it's fully cooked and the sauce has thickened and caramelized, which should take about 8-10 minutes.
  1. Assemble the Chicken Teriyaki Sushi Bowls:
  •   To serve, divide the cooked rice evenly among four serving bowls.
  •   Top the rice with the cooked chicken teriyaki.
  •   Arrange the steamed broccoli (or green beans) on the side.
  1. Garnish and Serve:
  •   Garnish each bowl with sesame seeds and sliced green onions.
  •   Drizzle Kewpie mayonnaise over the top for added flavor.

 If you're short on time, you can also follow the alternative method of cooking the chicken first and then adding the sauce. Here's how to do it:

Alternative Method (No Marinating):

  1. Cook the Chicken:
  •    Heat a large skillet or pan over medium-high heat.
  •    Add the chicken breast pieces to the hot skillet.
  •    Cook the chicken, stirring frequently, until it's fully cooked and has a nice sear on the outside. This should take about 6-8 minutes.
  1. Add the Teriyaki Sauce:
  •    Once the chicken is cooked, pour the Masterfoods Teriyaki Marinade over the cooked chicken.
  •    Stir well to coat the chicken pieces evenly with the sauce.
  1. Simmer and Thicken:
  •    Allow the chicken and sauce to simmer for a few minutes. The sauce will thicken and glaze the chicken.
  •    Continue simmering until you achieve the desired sauce consistency.
  1. Assemble the Chicken Teriyaki Sushi Bowls:
  •    Proceed to assemble the bowls as previously instructed, using the cooked chicken with the teriyaki sauce.
