Delicious Pumpkin and Carrot Soup

As we head into autumn, the days get shorter, and the weather gets colder. This is the perfect time to enjoy cozy and warming foods that will comfort you and lift your mood. One such dish is the classic pumpkin and carrot soup. Not only is this soup delicious and comforting, but it’s also incredibly easy to make. With just a few basic ingredients and minimal prep work, you can have a hearty and nourishing soup on your table in no time.

Ingredients:

1 small pumpkin, peeled and diced into 1-inch cubes

4 medium carrots, peeled and sliced.

1 onion, chopped

3 garlic cloves, minced

2 tablespoons olive oil

4 cups vegetable broth

½ cup coconut milk or cream

½ teaspoon ground cinnamon

Salt and pepper, to taste

Method:

Step 1.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until the onion is translucent.

Step 2.

Add the diced pumpkin and sliced carrots to the pot and stir well. Cook for 5-7 minutes until the vegetables are slightly tender.

Step 3.

Add the vegetable broth to the pot and bring to a boil. Reduce the heat to low and simmer for 20-25 minutes until the vegetables are very tender.

Step 4.

Remove the pot from the heat and let it cool for a few minutes. Then, use an immersion blender or transfer the soup to a blender and blend until smooth.

Step 5.

Return the soup to the pot and stir in the coconut milk, cinnamon, salt, and black pepper. Cook for another 5-10 minutes until heated through.

Step 6.

Taste and adjust seasoning as needed.

Step 7.

Serve hot with your choice of toppings, such as fresh herbs or a dallop of sour cream.
