Chocolate Easter Bunnies


With easter just around the corner, what better way to celebrate than with some delicious and easy, no-bake treats? Whether you’re looking for a fun activity to do with your kids, or something to bring to a family gathering, these recipes are sure to impress!

Mini Eggs Rocky Road

Ingredients:
- 300g milk chocolate
- 125g unsalted butter
- 100g digestive biscuits (crushed)
- 100g mini marshmallows
- 100g snakes
- 100g mini eggs

Method:
1. Line a 9-inch square tray with parchment paper
2. Place the chocolate and butter in a microwave safe bowl and microwave for 30 seconds at a time, stirring in between, until the chocolate is melted and smooth.
3. Chop the snakes into little pieces.
4. Add the mini marshmallows, digestive biscuits, snake pieces and mini eggs. Tip: Remember to save some for the topping!
5. Pour the mixture into the prepared pan and spread it out evenly.
6. Sprinkle the remaining mini eggs on top of the mixture.
7. Chill the rocky road in the fridge for at least 2 hours or until firm.
8. Once the rocky road has set, remove it from the pan and cut it into squares.

Easter Egg Rice Bubble Nests

Ingredients:
o 4 cups of rice bubbles
o 3 cups of mini marshmallows
o 2 tablespoons of butter
o Mini chocolate easter eggs
o Cooking spray

Method:
1. Melt the butter in a large saucepan over low heat.
2. Add the mini marshmallows to the saucepan and stir until melted and smooth.
3. Remove the saucepan from the heat and add the rice bubbles to the marshmallow mixture. Stir until the rice bubbles are fully coated.
4. Spray a muffin tin with cooking spray and scoop spoonful’s of the rice bubble mixture into each muffin cup. Press the mixture down with a spoon to create a nest shape.
5. Let the nests cool for a few minutes, then remove them from the muffin tin.
6. Add a few mini chocolate easter eggs to each nest.
7. Let the nests cool and set completely before serving.
