Crunchy Chicken Strips

  • 2tbsp chunky peanut butter (Pics if you have it)

  • 1 garlic clove, finely grated

  • 1 tsp curry powder

  • Dash of soy sauce

  • 2 tsp lime or lemon juice

  • 2 skinless chicken breast fillets (about 300g) cut into thick strips

  • Sweet chilli sauce


  1. Heat oven to 200C or 180C fan and line a baking tray with non-stick paper

  2. In a bowl mix 2 tbsp chunky peanut butter with 1 finely grated garlic clove, 1 tsp curry powder, a dash of soy sauce and 2 tsp of lime of lemon juice 

  3. Add 2 skinless chicken breast fillets, cut into strips, and mix well.

  4. Arrange on the baking tray, paced apart, and bake in the oven for 8-10 minutes until cooked, but still juicy. 

  5. Serve with sweet chilli sauce.
