Mussel & Pumpkin Fritters

Ingredients 

  • 2 cup grated pumpkin

  • 1 cup grated carrot

  • 2 spring onion, sliced

  • 4 eggs

  • 1/2cup wholemeal flour

  • 2 tsp baking powder

  • 2 cup chopped cooked mussel meat (2kg whole raw mussels)

  • 2 tbsp oil


Method:

  1. Mix together the spring onions, grated carrot, grated pumpkin, eggs, flour and baking powder until well combined

  2. Mix through chopped mussels

  3. Heat oil in a large frying pan over a medium heat

  4. Place tablespoons of mixture into the pan

  5. Cook until done
