Pumpkin & Parsnip Chips

1/4 Pumpkin
2 Parsnips
2 Tablespoons of Extra Virgin Olive Oil
1/2 Teaspoon paprika
Sprinkle of Salt and Pepper


Preheat oven to 220 C

  • Peel the skin from the pumpkin and parsnips and cut into this slithers

  • Place in a roasting dish

  • Cover in olive oil, salt, paper and paprika

  • Mix thoroughly

  • Lay on a baking tray and put in the oven at 180 degrees Celsius for 20 minutes or until crispy.

  • Enjoy
